Crab Crumble

SIMPLE Crab crumble.

For 500 grms of crab.

Tomato fondue.
1 tablespoon of olive oil
4 oz chopped onions
1 crushed clove of garlic
2 lbs of ripe or good quality tinned tomatoes.
Salt, pepper & a little sugar if needed.
Some thyme & fresh parsley

Sweat the onions & garlic , add the tomatoes & thyme, cover cook for 30 minutes.

Cream sauce.
Reduce 1 cup (8floz) of cream
Whisk in 6 oz of butter.
Mix the crab with the cream sauce. Season & add some chopped chives.
In a ramekin put in 1 desert spoon of tomato sauce, 3 quarter fill the ramekin with the crab mixture. Put the breadcrumbs in a pan & toss them with a little butter. Put the breadcrumbs on top of the crab. Cook for 15 to 20 minutes served with SIMPLE tossed salad.
